This lunar New Year, Chef Chris reminisces with recipes from his childhood
cooked lovingly by his Por Por (Grandma).
1. “Por Por’s Kau Yuk”. Chef Chris’ earliest memories of comfort food and Hakka identity
begin with this dish. A painstakingly prepared bed of alternating slices of Pork Belly and Yam is
a distinctly Hakka dish, rarely found in restaurants. Not to be missed.
2. Relish Pineapple Duck served with Prawn Crackers
Chef Chris’s master stock has been brewing for a loooooong time with different meats slowly
braised in it together with soya sauce, shao xing wine, ginger, dried mandarin, star-anise,
cinnamon and more.. lots more “secret ingredients”. These flavours intermingle and permeate the
duck to make this auspicious duck and pineapple dish.
3. Relish Long Life Hokkien Mee
4. “Por Por’s Nyonya Turmeric Chicken” a treasured family recipe that is aromatic and
full of Umami
5. “Por Por’s Salted Fish Achar”. There are many versions of this uniquely
Singaporean/Malaysian dish. But my Grandma’s version is the best.

6. Bak Wan Kepiting. A Peranakan favourite - Meatballs in clear broth.
7. Mongolian Lamb - Tender pieces of lamb steamed in spices, then fried and served on a bed
of cabbage. Tender, smokey, flavourful.
8. Signature Relish Butter Crabs (Singapore)
A profoundly starred dish. Chef Chris’ recipe, uniquely Singaporean now, featured on local
television.
Dessert: Relish Rum Drenched Fruit Cake served with fresh fruits and berries
