Dirty Rice
It tastes better than it sounds. Dirty rice was born in the bayous of Louisiana and is a staple of the Cajun folk who live there. The flavors are bold and earthy on account of the chicken and pig's liver gravy. Plain rice is dusted with this mixture giving it a dirty patina but delicious flavor. Not to be missed!

Seafood Gumbo
The secret to a great Gumbo is a really dark roux. Simmer flour in oil until it's the color or burnished chocolate. Be careful not to burn the roux or yourself! Add homemade stock and bob's your uncle, you've got the best Gumbo in Singapore.
